You will need:
Grated mozzarella 200g
One egg yolk
Step 1
Melt the cheese in the microwave for 60-90 seconds, mix until smooth, let cool slightly and mix in the egg yolk
Step 2
Transfer the dough to a large sheet of parchment, cover with another sheet and roll out the dough with a rolling pin. Peel off the top layer of paper and cut the dough like a paste. Put the pasta in the refrigerator for at least 6 hours.
Step 3
Boil water in a saucepan and simmer pasta for 40-60 seconds. Transfer to a colander and rinse with cold water. Cool slightly and serve with your favorite sauce!
