Another variation on the fathead dough theme – tender, airy scones! In fact, this dough is a mixture of cheese and flour analog, but the texture of the bread is very interesting, almost indistinguishable from the usual yeast bread. Try it, experiment with baking shapes, and enjoy the great taste!
Use low-moisture mozzarella cheese.
Eat the buns warm. When they cool, the cheese will make them hard. Cold ones are better reheated lightly in the microwave.

You will need:
Mozzarella cheese 150g
Cream cheese 60g
Almond flour 120 g
Coconut flour 2 tablespoons
Baking powder 2 tsp.
Egg 3 pcs.
Salt to taste
Step 1
Put the cream cheese in a bowl, grate the mozzarella and place on top. Heat the cheese in the microwave in 30 second intervals and stir each time until the cheese is smooth. Cool slightly.
Step 2
Mix together the flour, salt, and baking powder. Add the two eggs to the cheese, pour in the dry ingredients and mix thoroughly. Ideally, use a mixer with a dough hook attachment for this.
Step 3
Transfer the dough to clingfilm, divide into 8 pieces and roll each into a ball (grease your hands with olive oil to prevent the dough from sticking). Place the balls on a parchment-lined baking sheet. Whisk the egg in a bowl and brush it on the balls of dough.
Step 4
Place in a baking tray at preheated 180°C for 20-25 minutes until golden brown.
