Ingredients :
Mozzarella Cheese 200g
225g cream cheese
Almond flour 80 gr
Coconut flour 20 gr
Leavening powder 2 tsp.
1 egg
Erythritol 70g
Salt 2 gr
Lemon juice 1 tbsp.
1 egg yolk
Butter 28g
Creamy 15 ml
Step 1
Mix 180g cream cheese, 50g erythritol, lemon juice and egg yolk for the filling.
Step 2
For the dough: grate the mozzarella and add the cream cheese to it. Heat the cheese in the microwave (one minute heat, stir, 30 seconds heat, stir, etc. until soft and smooth). Add the almond and coconut flour, baking powder, egg, 10g of erythritol, salt and mix thoroughly
Step 3
Divide the dough in half and then roll out to about 5mm thick. Cut into 4 squares and make a slit in each corner toward the center. Place a spoonful of filling in the center of each slice and then fold the corners toward the middle
Step 4
Put the tray in a preheated 180° C oven (with a fan assisted function) for 12 to 15 minutes.
Step 5
While the buns are baking, put 15g cream cheese, butter, cream, and10g erythritol in a small saucepan. Melt over medium heat until smooth. Place the glaze in a piping bag and pour over the prepared puff pastry.
