To make this “Gingerbread Cookies” recipe
You will need:
Almond flour 190g
Cinnamon 1 tbsp.
Ginger, ground 1 tsp.
Cloves, ground 1/4 tsp.
Nutmeg, ground 1/4 tsp.
Baking powder 1/2 tsp.
Butter 50 g
Erythritol 30 g
Egg 1 egg
Vanilla flavoring to taste
Step 1
In a medium bowl, mix together the almond flour, cinnamon, ginger, cloves, nutmeg and baking powder. In a large bowl, whisk the butter with the erythritol, then add the egg and flavoring, whisk, then add the dry ingredients and mix thoroughly.
Form the dough into a ball and place in the refrigerator for at least 30 minutes.
Step 2
Place the dough between two layers of parchment and roll out to 0.5cm thickness. Cut out cookie shapes and transfer them to a baking tray. Place in a preheated 180°C oven for 10 to 15 minutes until golden. Let cool on a baking tray back to room temperature.
