VEGAN TOFU WITH SESAME AND EGGPLANT


Eggplant noodles in a spicy Asian sauce and sesame tofu slices are a great option for an easy keto dinner for vegetarians! The spongy texture of the eggplant makes it taste almost indistinguishable from real pasta.

This keto recipe doesn’t require any specific equipment or a lot of time to make. Half an hour and dinner is ready – enjoy!

Ingredients :

Tofu 450g

Chopped coriander 200g

Vinegar 3 tbsp.

Sesame oil 4 tablespoons

Finely chopped garlic 1 tsp.

Chopped chili pepper 1 tsp.

Eggplant 1 pc.

Olive oil 1 tbsp.

Salt and pepper to taste

Sesame seeds 25g

Soy sauce 25g

Method
Step 1
Preheat the oven to 95°C. Remove tofu from its wrapping and wrap in paper towel. Place under a press and let it sit like this for a while to get the excess liquid out.

Step 2
In a bowl, combine ¼ cup cilantro, vinegar, sesame oil, chopped garlic and chili pepper.

Step 3
Peel and slice the eggplant into sticks. You can do this by hand, or use a special chopper to get even slices of “noodles”. Mix the eggplant with the marinade.

Step 4
Add a tablespoon of olive oil to a skillet and heat it over medium heat. Add the eggplant to it and cook, stirring, until it softens. Eggplant absorbs liquid, so if it starts to stick to the pan, add some sesame seeds or olive oil.

Step 5
Turn off the oven. Stir in the remaining cilantro and eggplant and place the noodles in the oven, covering the plate with a lid or foil. Rinse the pan and put it back on the heat.

Step 6.
Unroll the tofu and slice into 8 slices. Sprinkle the sesame seeds on a plate and coat the tofu in them.

Step 7
Heat 2 tablespoons of sesame oil in a frying pan and fry the tofu in it for 5 minutes on each side. Add ¼ cup of soy sauce to the pan and cook the tofu until the slices are brown and covered in caramelized soy sauce.

Step 8
Remove the noodles from the oven and place the tofu on top.
