KETO BEEF WELLINGTON

Want to surprise your friends and family with a fantastic holiday dish, but don’t know what to make? It’s complicated. One interesting dish that can only be ordered at an expensive restaurant is Beef Wellington, roasted tenderloin with mushroom or vegetable pâté in a puff pastry. Here’s a keto recipe for a light, low-carb version.

When planning to surprise your guests, pay special attention to the choice of meat. It is better to take a loin of loin – it is tender, juicy and easy to slice. Make sure the meat is fresh and bright red.

Instead of vegetable, our keto recipe uses chicken liver pate. It has the consistency of cream cheese, so it’s easy to spread and tastes a lot like tuna. Just imagine, juicy medium-rare tenderloin, flavorful spices, tender pâté and a crispy crust – you can afford a dish like this, even on a keto diet!

Ingredients :

Beef steaks halved 2 units.

Salt and pepper to taste

Butter 1 tbsp.

Shredded mozzarella cheese 250ml

Almond Flour 125ml

Pâté of liver 4 Tbsp.

Step 1
Season the steaks with salt and pepper.

Step 2
Melt butter on medium heat.

Step 3
Once the butter is melted, gently place the meat in the pan.

Step 4
Flip the steaks every 2-3 minutes, frying them on each side, before removing them from the heat and cooling completely. This is important!

While the steaks are cooling, heat the mozzarella in the microwave for 1 minute.

Step 6
Quickly mix with the almond flour and form a dough.

Step 7
While the dough is warm, place it on parchment paper.

Step 8
Place another piece of parchment paper on top of the dough and use a rolling pin to roll out the dough.

Spread a tablespoonful of pâté on the dough, just enough to accommodate one piece of meat.

Step 10
Cut the dough to wrap it around the meat.

Do the same with the remaining meat and dough.

Bake at 200°C until the dough is golden brown, about 20-30 minutes.
