Zazziki is a classic Greek sauce made from yogurt, cucumber and garlic. In this keto recipe, it will be the base marinade for chicken kebabs. I prefer to use chicken thigh fillets. With it, the kebab will be more fatty and juicy.
For cooking you will need small skewers or wooden skewers. They should be soaked in water beforehand, by the way, so they do not burn during cooking.
Cooking time 20 minutes.
Number of servings 4.
Ingredients :
Fillet of chicken thigh 400g
Greek yogurt 80g
Olive oil 1 tbsp.
Wine vinegar 2 tsp.
Garlic clove 2 pcs.
Turmeric 1 tsp.
Oregano 1 tsp.
Salt and pepper to taste
Step 1
Cut the chicken thigh fillets into small pieces (2.5cm) and place in a bowl.
Mix the yoghurt, olive oil, vinegar, turmeric, oregano and minced garlic and pour over the chicken. Lightly salt, pepper and mix thoroughly. Leave to marinate for at least an hour.
Step 2
Take skewers (wooden skewers) and put the chicken pieces on. Optionally salt the skewers.
Step 3
Shish kebab can be cooked in the oven, on the grill or on the barbecue:
- In a preheated to 180 C oven, cooking will take about 20 minutes. After increasing the temperature to maximum for another five minutes until the golden crust;
- On the grill chicken will be cooked for about 15 minutes. I prefer to fry the kebab on four sides for an average of 3-4 minutes on each side;
- The cooking time on the barbecue varies with the barbecue itself and the coals, so just “until done”)
Step 4
Serve chicken with Dzadziki sauce (yogurt + fresh cucumbers + garlic), fresh vegetables and feta cheese
Bon appetit!
