KETO SUSHI

Yes, you read that right! We offer you a keto sushi recipe and it really is amazing. No need to waste a lot of time, no headaches – it’s not as difficult to prepare the dish as you might think. We recommend this keto recipe to everyone who loves sushi – you can use any seafood (crab, tuna, salmon, shrimp), a minimum of carbohydrates is guaranteed.

Rice, when following a keto diet, is replaced by cauliflower. It will need to be shredded, but not too much, otherwise you will get mousse instead of rice texture, after adding cream cheese. Cook the cauliflower in a hot pan to quickly remove any excess moisture.

To form a roll you will need a bamboo mat, with its help you will be able to form a tight roll, which cannot be achieved using only your hands.

Cooking time 60 min.

Portion quantity 3.

Ingredients :

Cauliflower 480 g

Melted cream cheese 180g

Rice vinegar 1-2 tbsp.

Nori sheet 5 pcs.

Cucumber 1 pc.

Medium avocado 1/2 pc.

Smoked salmon 150g

Soy sauce 1 Tbsp.

Step 1
Using a food processor, chop the cauliflower to a rice-like consistency. Place it in the food processor in small batches so that the “rice” comes out evenly.

Step 2
Cut off the tails of the cucumber on both sides, then cut it into small strips. Set aside in the refrigerator.

Step 3
Cook the cauliflower rice over high heat, adding 1 tbsp soy sauce.

Step 4
Once the cauliflower is cooked and the excess moisture has evaporated, place it in a bowl with the cream cheese and rice vinegar (1-2 tbsp depending on taste). Mix well and place in the refrigerator to chill.

Step 5
While the “rice” is cooling, peel and slice half of the avocado into small strips.

Step 6
Place a sheet of nori on a bamboo mat covered with foil. Spread a thin layer of some of the cabbage rice on it, leaving a couple of inches of space on top.

Step 7
Place all the fillings on top of the “rice”.

Step 8
Roll up the roll tightly with a bamboo mat. There are plenty of YouTube videos showing how to do this properly.

Step 9
Serve with pickled ginger, wasabi and spicy mayonnaise.

Bon appétit!
