ZUCCHINI STUFFED WITH CHICKEN AND BROCCOLI

We’re all familiar with a dish like stuffed peppers. Now it’s time to try zucchini! They are perfect for baking with cheese and will help you diversify your diet on a keto diet.

The toppings here work perfectly together – chicken, broccoli and a little sour cream for a bundle and creamy flavor… If you want, you can add bacon, it will fit perfectly in this keto recipe too!

Ingredients :

Two big zucchini 250g

Butter 2 tablespoons

85gr Cheddar cheese

Broccoli 100 g

Grilled chicken 180 g

Sour cream 2 tablespoons

Green onions to taste

Step 1
Preheat oven to 200 degrees. Cut the zucchini in half lengthwise (in this keto recipe, the longer zucchini you take, the better).

Step 2
With a spoon, remove the seeds and core of the zucchini, leaving the flesh about 1 cm thick.

Step 3
Add a tablespoon of melted butter to each half, salt and pepper. Put them in the oven to bake a little while you prepare the filling. This will take about 20 minutes.

Step 4
Chop the grilled chicken into small pieces with a fork. Measure out about 180 grams and remove the rest.

Step 5
Cut the broccoli into pieces that are comfortable to eat.

Step 6
Mix the chicken and broccoli together, adding the sour cream.

Step 7
Take the zucchini out of the oven and fill with the chicken and broccoli filling.

Step 8
Sprinkle grated Cheddar cheese on top and place back in the oven for 10-15 minutes. The cheese should melt and turn golden brown. Garnish with green onions on top and serve with sour cream or mayonnaise!
