Ingredients :
Almond flour 200g
Coconut flour 40g
Butter 180g
Baking powder 1 tsp.
Salt to taste
Erythritol 130g
400g cream cheese
Sour cream 150g
Egg 3 pcs.
Vanilla Extract 1 tbsp.
Lemon zest 1 tsp.
Step 1
Mix the almond flour, coconut flour, baking powder, 2 tbsp of erythritol and salt. Melt the butter and add to the dry mixture.
Line the bottom of a 2 cm baking sheet with parchment and spread the batter.
Bake for 15 minutes in a preheated oven at 160 C, then allow to cool.
Step 2
Mix together the cream cheese, sour cream, vanilla extract, lemon zest and remaining erythritol. Add the eggs one at a time and mix thoroughly. Pour the filling over the base.
Step 3
Wrap the bottom of the mold with foil, place on a baking tray with water and cook for 50 minutes at 160 C. Then, turn off the oven, ajar the door and keep the cake for another 30 minutes.
After, cool it to room temperature and put it in the refrigerator for at least 4 hours or overnight.
