Ingredients :

Egg 4 Eggs

Erythritol half cup

Lemon zest 2 teaspoonfuls

Almond flour half cup

Blueberries half cup

Step 1
In a large bowl, whisk the egg yolks with the sweetener for 2-3 minutes. Then, add the almond flour and lemon zest and mix thoroughly.

Step 2
In a separate bowl, whisk the whites until sturdy peaks. Carefully introduce the whites into the batter in four steps. After, add the blueberries (leave a little for decoration).

Step 3
Pour the batter into a baking dish and place in a preheated 180 C oven for 30 minutes. When the cake is ready, take it out of the oven and let it stand at room temperature for 15 minutes. Sprinkle with the blueberries before serving.
