A great keto recipe for Viennese waffles will always come in handy – whether it’s for breakfast, a snack at work, unexpected guests or just a craving for a sweet treat) In addition, one waffle has only 1 g of carbohydrates!
As a side note: The dough is unusually thick, but the waffles are very tender and fluffy.

Ingredients :
To make Soft Vienna Waffles You need:
Almond flour 32 g
Coconut flour 14 g
Psyllium 1/2 tbsp.
Xanthan gum 1/2 tsp.
Water 120 ml
Coconut oil 30 g
Erythritol 2 tablespoons
Salt to taste
Egg 1 pc.
Excergent 1/2 tsp.
Step 1
Mix together the almond flour, coconut flour, psyllium and gum. Set aside.
Heat water, oil, erythritol and salt in a ladle. Bring to a boil, reduce heat to low and add to flour mixture, stirring constantly. Continue boiling and stirring until the dough begins to come away from the walls and form into a ball.
Step 2
Transfer the dough back to a bowl and let cool for 5 minutes. The dough should be warm, but not hot enough. Beat in the egg and mix thoroughly, then add the baking powder and mix with a mixer until smooth. In the end, the dough should be very elastic. Let the dough rest for 10 minutes and in the meantime, preheat the waffle iron.
Step 3
Grease the waffle iron with butter and spoon the batter into it. It will be thick, so smooth it out with a wet spatula. Bake for 8-12 minutes on high heat until golden brown!
