A luxurious portioned cheesecake without baking, in 15 minutes and only 3g of carbs! What more could one want? Well, except to share this treat with someone close to you. Therefore, this recipe is for two servings

Ingredients :
Almond flour 25g
Erythritol 3 tablespoons
Cinnamon 1/4 tsp.
Salt to taste
Butter 45g
Cream cheese 70 g
Strawberry 50 g
Sour cream 40 g
Lemon juice 1/4 tsp.
Step 1
Prepare the base: lightly toast the almond flour in a skillet over medium heat until it is completely golden and fragrant (2-4 minutes); transfer the flour to a small bowl (mold or glass) and mix with 1 tbsp of erythritol, cinnamon and salt; add 15g of melted butter, mix thoroughly and press to the bottom. Place in the refrigerator while you make the cream.
Step 2
Blend the cream cheese and strawberries in a blender. Set aside.
Whisk the sour cream in a bowl for 2-3 minutes and set aside.
Add butter to bowl and beat with mixer until creamy. Add the strawberry-cheese mixture, lemon juice, and erythritol and whisk until smooth.
Transfer to the whipped sour cream and stir.
Step 3
Transfer the cream to the base and place in the refrigerator for a couple of hours (or overnight).
