Method
Step 1
Preheat the oven to 170°C. Line the bottom and sides of an 18cm baking tin with parchment and butter it.
Step 2
Beat the eggs with a mixer at maximum speed for about 8 minutes. Add the erythritol and beat for another 2 minutes at maximum speed. The mixture should be fluffy and quadruple in size.
Step 3
Put the peanut butter paste in a bowl, add the egg mixture (one-third at a time), mix with a spatula until smooth and pour the batter into the baking dish.
Step 4
Bake for 30-35 minutes (until toothpick is dry). Allow cake to cool before slicing. Sprinkle with erythritol powder and garnish with berries before serving.
