I’m sharing a great lemon pie recipe! Made it here the other day when guests came over – everyone loved it!
A couple of nuances:
You can add vanilla flavoring if you like. I didn’t have any on hand, but I don’t think it would be any worse.
Cool the pie at room temperature before slicing
If you decide to sprinkle or spread something yummy on it, slice it first. It comes out much neater this way 😉

Ingredients :
Melted butter 100g
Almond flour 150 g
Erythritol 120g
Lemon 3 pcs.
Egg 3 pcs.
Salt to taste
Step 1
Mix the butter, 90g flour, 30g erythritol and salt. Place the dough in a baking dish and bake for 20 minutes in a preheated 180 C oven
Step 2
Grate the zest from one lemon and squeeze the juice from all three. In a bowl, combine the zest, juice, eggs, 90g erythritol, 60g flour and salt. Spread the mixture on the base and bake for another 25 minutes.
