ONE-MINUTE CUPCAKE RECIPE

This keto cupcake recipe is good for everything – it’s both tender and fluffy and delicious, but most importantly, I offer you five variations at once!

I confess I learned this recipe from a book by author Maria Emmerich. It appealed because it has only four basic ingredients and takes only one minute to make!

Cooking time 1 minute.

Portion number 1

Ingredients :

1 egg.

Coconut flour 12g

Baking powder half a tsp.

Salt to taste

Step 1
Grease a tin with coconut oil

Step 2
Mix all the ingredients until smooth

Step 3
Bake in the microwave for 1 minute on maximum power

Cooking Options:

  1. Sweet cupcakes – add sweetener and your favorite berries
  2. Nutty muffins – add a couple tablespoons of peanut butter and sweetener
  3. Cinnabon – add a teaspoon of cinnamon and sweetener to the batter. Immediately after baking, sprinkle cinnamon on top
  4. Cheese muffin – add two tablespoons of grated cheese and some herbs to the batter. Sprinkle cheese on top immediately after baking.
  5. Spinach and Feta Cheese Muffins – add two tablespoons of feta cheese and finely chopped spinach leaves to the batter.
