This keto cupcake recipe is good for everything – it’s both tender and fluffy and delicious, but most importantly, I offer you five variations at once!
I confess I learned this recipe from a book by author Maria Emmerich. It appealed because it has only four basic ingredients and takes only one minute to make!

Ingredients :
1 egg.
Coconut flour 12g
Baking powder half a tsp.
Salt to taste
Step 1
Grease a tin with coconut oil
Step 2
Mix all the ingredients until smooth
Step 3
Bake in the microwave for 1 minute on maximum power
Cooking Options:
- Sweet cupcakes – add sweetener and your favorite berries
- Nutty muffins – add a couple tablespoons of peanut butter and sweetener
- Cinnabon – add a teaspoon of cinnamon and sweetener to the batter. Immediately after baking, sprinkle cinnamon on top
- Cheese muffin – add two tablespoons of grated cheese and some herbs to the batter. Sprinkle cheese on top immediately after baking.
- Spinach and Feta Cheese Muffins – add two tablespoons of feta cheese and finely chopped spinach leaves to the batter.
