To prepare this Blueberry Muffin recipe You will need:

5 Eggs.

Almond flour 180g

Coconut flour 2 tablespoons

Blueberries ½ cup

Baking powder 1½ teaspoons

Whipping cream 3 tablespoons

Erythritol ½ cup

Butter 3 tablespoons

Vanilla flavoring to taste

Step 1
Preheat the oven to 180°C. Grease a 20 x 10 cm baking tin or line it with parchment. Crack the eggs into a bowl and add the sweetener and flavouring. Beat with a mixer for 2 to 3 minutes. Add the heavy whipped cream and mix again.

Step 2
Mix all the dry ingredients in another bowl: almond flour, baking powder and coconut flour. Add the dry ingredients to the egg mixture and mix thoroughly with a mixer. Add the butter and mix again. Add the blueberries and pour the batter into the baking dish.

Step 3
Bake for about 45-50 minutes or until done (check with a toothpick). Allow to cool and enjoy!
