This is an uncompromising keto cookie, as no one would ever tell it apart from a regular cookie! Or rather, a very tasty cookie) Soft, juicy and made with only four ingredients; it has minimal carbs, no gluten, no lactose and, of course, no sugar!
Important points
Don’t bake the cookies too hard. Especially if you don’t add an egg.
Lightly grease the parchment with coconut oil so the cookies come off easily. You don’t need to do this with a silicone baking mat.
For a vegan version of the cookies, replace the egg with 3 tablespoons of chia seeds
The cookies keep great in the refrigerator for up to two weeks!
Cooking time 4 min.
Portion quantity 20
Ingredients :
Coconut oil 90g
Almond flour 90g
Coarse egg or chia seeds 1pc.
Chocolate protein 2 tablespoons
25g (Optional) Sugar-Free Bitter Chocolate
Step 1
Preheat oven to 180° C and line baking tray with parchment or silicone lined baking mat
Step 2
In a large bowl mix all the ingredients.
Add protein as you wish, but I highly recommend it: first, the cookies taste better and are more filling, and second, the composition of nutrients becomes more balanced
Step 3
Form even balls of dough with your hands. Place the balls on a baking tray and press lightly
Step 4
Bake for 10-12 minutes until the edges are browned, then remove from the oven and cool completely at room temperature
Bon appetit!
