Svenska köttbullar are classic Swedish meatballs. I loved them when I worked at IKEA. It’s been years since then, but I can’t help feeling nostalgic!
Of course, there they are typically served with mashed potatoes and tart lingonberry jam, but you and I will master the keto version!
The recipe is for 20-22 meatballs or two servings of 10-11.
Cooking time 60 minutes
Number of servings 2
Ingredients :
Olive oil 2 tablespoons
Onion 1/2 cup
Ground beef 200 g
Ground pork 200 gr
Almond flour 25 g
Egg 2 pcs.
Sweet pepper 2 tsp.
Salt 1/2 tsp.
Heavy cream 250ml
Water 250 ml
Fresh parsley to taste
Step 1
Finely chop the onion and fry in olive oil until soft.
Put the onions in a bowl, add the minced meat, almond meal, eggs, pepper and salt. Mix well.
Use a tablespoon to make meatballs of the same size. Make meatballs, place on a plate and place in the refrigerator for 10-15 minutes.
Step 2
In the same frying pan, heat the olive oil and fry the meatballs over medium heat in small batches. Flip each piece several times to fry evenly.
Step 3
Once all the meatballs are cooked, prepare the sauce: reduce the heat, add the cream and water to the pan. Stir thoroughly, salt, and simmer for about 10 minutes, until the sauce has reduced to the desired consistency.
Pour the sauce over the meatballs and garnish with fresh parsley!
Bon appetit!
