PANCAKE CAKE

Mille Crêpe is a classic French cake that consists of many very thin crepes and literally translates to “thousands of crepes.”

The pancakes are soaked in a light cream, creating a delicate cake. Flavors and toppings can vary, but vanilla and strawberry is a classic. It requires no baking, just patience and a pan

Ingredients :

Almond flour 25g

Cream cheese 60g

Egg 2 pcs.

Erythritol 3 tbsp.

Milk to taste

Butter 30g

Heavy cream 100 ml

Vanilla essence 1/2 tsp.

Strawberries 6 pieces.

Step 1
In a food processor, combine the almond flour, cream cheese, eggs and 2 scoops of erythritol. Add milk and mix thoroughly. The consistency of the dough should be fluid.

Step 2
Fry the pancakes in a well-heated buttered pancake pan. The batter should be enough for 5-6 thin pancakes. Set all the pancakes aside.

Step 3
In a food processor, whip heavy cream, add vanilla essence and erythritol to taste.

Step 4
Form the pancakes into an even stack and cut in half. Place one half on top of the other, forming a stack in a semi-circle shape. Place one pancake on a plate, placing a thin layer of cream filling on top. Place another pancake on top, spread the filling, and so on. When done, chill in the refrigerator for an hour.
Finally, garnish with strawberries and cream on top.
