You will need:
Whole chicken (we took 1.5 kg) 1 pc.
Lemon 1 pc.
Onions 3 pcs.
Garlic clove 5 pieces
Herbs (sage, thyme and rosemary) 3 tsp.
Butter 60g
Step 1
Rinse the chicken under cold water and pat dry with a towel.
With a toothpick, pierce the lemon on all sides. Put a tsp of the herb mixture inside the chicken, then the lemon, then another spoonful of herbs. This will allow the flavor to permeate the chicken and keep it juicy.
Step 2
Slice the onion into rings and the garlic into small wedges. Place the onions and garlic on a baking tray and place the chicken on top.
Step 3
Bake in a preheated 180°C oven (30 minutes for every 500g of chicken). At the end of this time, remove the chicken from the oven and brush thoroughly with oil and sprinkle with the remaining herbs. Return to the oven for another 15 minutes or until golden brown. Take the chicken out and let it rest for 15 minutes at room temperature.
