KETO PUDDING

Pudding is an easy dessert that is sure to be a favorite of your keto diet, and you won’t believe how easy it is to make! There are several cooking options: add whole eggs for a thicker consistency or just the yolks to make the pudding more tender.

This is a keto recipe for a dense pudding that holds its shape perfectly. The caramel sauce will complement and make a richer flavor, which will be the most delicious part of the dish. The only difficulty in this keto recipe is preparing the pudding. It is baked in a steam bath and it is very important that no water touches the cream. You can tell when the pudding is ready by the following signs: the top becomes tight and firm, and a wooden stick stays clean when you poke the pudding with it. Sprinkle cream sauce over the top and enjoy a light dessert!

Ingredients :

Erythritol 30g

Water 12g

Butter 1 tbsp

Whipped cream 250 ml

Eggs 2 pcs.

2 egg yolks

Vanilla flavoring to taste

Erythritol 25g

Step 1
In a deep saucepan, heat the erythritol for the caramel sauce, stirring frequently.

Step 2
Add water and oil.

Step 3
Cook, stirring, until sauce is golden brown.

Step 4
Pour the sauce into the bottom of each mold. Set aside and allow to cool.

Step 5
In a bowl, mix together the whipped cream, remaining erythritol and vanilla.

In a separate bowl, whisk the eggs, then add the yolks and whisk again.

Slowly add, stirring, the eggs to the cream mixture.

Pour the cream into the molds, on top of the caramel.

Place the molds in a dish and fill halfway with hot water. Bake at 180°C for 30 minutes. Take the dish out of the oven, but leave in the hot water for another 10 minutes.

Using tongs, remove the pudding molds and leave in the refrigerator for at least 4 hours, or better yet overnight.

Carefully run a knife along the sides of the mold. Turn the mold upside down and slowly lift, leaving the pudding on the plate.
