Ingredients :
Coconut shavings 60g
Coconut cream 60 ml
Erythritol 50 g
Dark chocolate without sugar 60 g
Step 1
Mix the chips, cream and erythritol in a small bowl until you get a thick but crumbly consistency. The coconut filling should hold together, but should not be watery or too dry.
Step 2
Spoon the coconut filling into rectangular silicone molds.
Leave a small space on top for the chocolate (about 5mm).
Chill the coconut filling in the refrigerator for 30 minutes.
Step 3
While the coconut filling is cooling, melt the chocolate in a water bath. Pour it into the filling molds and chill again for 30 minutes.
Step 4
Remove the chocolate-bottomed coconut filling from the silicone molds and place on a baking tray (lined with parchment paper) or rack. Pour the rest of the melted chocolate over the coconut bars and refrigerate again for 30 minutes.
