RECIPE FOR WAFFLE TUBES FOR ICE CREAM

We’ve posted quite a few ice cream recipes before, but what’s ice cream without a straw?) The waffle cone changes everything! It sends us straight back to a happy childhood…

Erythritol takes a long time to solidify and become crunchy. About 10 times longer than regular waffles with sugar.

Cooking time 35 min.

Ingredients :

Almond flour 30g

Salt to taste

Gum xanthan gum 1/8 teaspoon.

Butter 30 g

Erythritol 45g

Protein 1 pc.

Vanilla extract half a tsp.

Method
Step 1
Mix together the almond flour, salt, and xanthan gum. In a separate bowl mix together the egg white, melted (but not hot!) butter, erythritol and vanilla. Add the dry mixture and mix thoroughly. Allow the dough to stand for about 10 minutes.

Step 2
Preheat the oven to 180°C. Line a baking tray with parchment and grease with butter. Spoon out two tablespoons of dough and roll out a circle 10-12cm in diameter. Normally place two circles on the baking tray. Bake for 7-9 minutes, remove from the oven, wait 1 minute and very gently invert. Return to the oven for another 2-3 minutes, until golden brown.

Step 3
Take the tray out of the oven, carefully transfer the waffles to a cone mold and let cool completely.
