Almond flour 180g
Baking powder half a tsp.
Cinnamon 1 tsp.
Erythritol 100+30 g
Butter 100+50 g
1 egg
Pumpkin puree 150ml
Cream cheese 120g
Cream 2 tbsp
Vanilla flavoring to taste
Step 1
Preheat the oven to 175°C and line a baking tray with parchment.
Step 2
Mix the flour, cinnamon and baking powder and set aside. Whisk the melted butter (100 g) and 100 g of erythritol for 3-5 minutes. Add the egg, pumpkin puree, and flavoring and whisk. Add the dry mixture and mix until smooth.
Step 3
Spoon the batter onto a baking tray and bake for 10-12 minutes until done. Remove from the oven and cool completely.
Step 4
Beat 50g of butter and 30g of erythritol, add the cream cheese and cream and whip until smooth and creamy.
Step 5
Place the cream on half of the cookies and cover the top with the other cookies.
