ZUCCHINI BOLOGNESE PASTA

Although very simple to make, Bolognese is a great hearty meat sauce traditionally added to pasta or lasagna. The secret to delicious bolognese is a long cooking time and the right temperature.

Ingredients :

Ground beef 700g

Olive oil 3 tablespoons

White onion 100 g

Garlic cloves (minced) 2-3 pcs.

Thyme half a tsp.

Ground nutmeg and half a tsp.

Marjoram half a tsp.

Tomato paste (no sugar) 200g

Heavy whipped cream 2 tablespoons

Chicken broth 25 ml

Salt and pepper to taste

Medium zucchini (2-3 pieces) 570 g

Mozzarella cheese (grated) 100 g

Fresh basil (optional) 5g

Step 1
Heat a frying pan over medium heat, then turn it down to low. While it’s heating, finely chop the onion.

Step 2
Add 1 tablespoon of olive oil to the hot pan.

Step 3
Then place the onions and fry until they are translucent and golden.

Step 4
Add the crushed garlic.

Step 5
Place the minced meat in the pan.

Add spices – thyme, nutmeg, marjoram and black pepper to taste.

Stir the entire contents of the skillet and stir-fry until almost all of the minced meat is brown.

Add all of the tomato paste and stir.

Add two tablespoons of cream.

Finally, add the chicken broth.

Turn off the heat, stir the sauce, and let it stand for about 10 minutes before transferring it to the preheated multicooker. Don’t transfer very hot sauce to cold pottery, it may crack!

Close the multicooker and let the sauce simmer for 8 hours. Stir periodically.

Preheat the oven to 175 degrees. Use a spiral vegetable slicer to cut the zucchini into noodle shapes. Place the resulting pasta in a baking dish.

Add 2 tablespoons of olive oil to the zucchini and stir.

Place the bolognese sauce on top of the zucchini noodles.

Sprinkle grated mozzarella on top of the dish.

If you put the just-cooked, still hot sauce on top, you’ll only need to bake the pasta in the oven for 15-20 minutes. If, however, the prepared sauce has had time to cool or stand in the refrigerator, you’re better off baking for 30-35 minutes.
Serve, garnished with fresh basil.
